Established in 1815 Ardbeg, meaning The Small Promontory, has been producing heavily peated whisky which is famous worldwide. While impossible to encompass all the flavours and characteristics in a short summary you may typically expect hints of oak and salt , large amounts of smoke and peat and very pleasant sweetness.

Bowmore
Bowmore, which is Gaelic for Great Reef, claims to have been established in 1779. However, a closer look shows that production has started before then and the date was simply when they first decided to pay taxes. Typical notes would be the Islay peat smoke, dried fruit and sherry with hints of salt and spices.

Bruichladdich
The Bruichladdich Distillery (established 1881) produces three different labels. There’s the eponymous Bruichladdich, which is entirely unpeated with tastes of honey, jammy port wine and raisins. There’s Octomore, which is extravagantly peated with notes of dark chocolate and caramel. And there’s Port Charlotte, which offers what’s probably closest to the canonical Islay style: robustly smoky whiskies with a maritime tinge.

Bunnahabhain
Bunnahabhain was established in 1881 and has a reputation as the mildest and most mellow of Islay malts. This can be a little misleading however for even though the spirit is largely unpeated, it remains a malt of great character and robust flavour, forged through a unique marriage of sherry and salty sea air. The name Bunnahabhain means foot of the river which describes the distillery location well.

Caol Ila
Caol Ila, meaning the sound of Islay, is the largest of the distilleries on Islay, most of its spirit being used in Johnny Walker. A strong peated taste and the proximity to the salty coastal air lend flavour to one of the most approachable whisky’s on Islay. Established in 1846 it is one of the few distilleries keeping traditions alive such as hand cutting peat.

Laphroaig
Founded in 1815 and named for the land at the head of Loch, Laphroaig is on the south coast of Islay. Laphroaig calls itself ‘the most richly flavoured of all scotch whiskies and with its very distinctive taste and smell it’s a hard claim to deny. Except a bold smoky taste followed by a hint of seaweed and a surprising sweetness.

Kilchoman
Kilchoman is the second newest distillery on Islay founded only in 2005.The distillers are some of the most experimental on the Isle with rum and tequila casks being used to create new flavours to make them stand out. Typical flavours are impossible here as they use such a range of casks to finish their whisky.

Lagavulin
The name Lagavulin is an anglicisation of Lag a Mhuilinn, the Scottish Gaelic for hollow of the mill. The site on which Lagavulin sits is known to have had at least 10 illicit distilleries from as far back as 1742, Lagavulinbeing established there in 1816. Thick and heavy, the Lagavulin signature style is rich and meaty, reminiscent of smoked bacon using barley peated at around 35ppn.
